SUPER BOWL SMOKED CHICKEN WINGS

Marinating was the key here.  I made up two batches.  One marinated in a homemade BBQ sauce and the other was made with a spicy buffalo.  I marinated them for 24 hours.  Then I smoked them in my smoker on game day for about an hour at 350 degrees.   Every 20 minutes or so I would baste them with the sauce that I marinated them in.  They turned out amazing!  Check out my marinade recipes below.  When smoking chicken its much different then the low and slow for briskets or pork.  I do a higher heat for an hour and keep the smoke heavy.  I like to use apple wood.

The key to most of my marinades is starting with a couple cups of water and a 1/2 cup of olive oil.  This is my base.  Then I add seasonings to that base.  I don't really measure the seasoning and just like to throw 3 to 4 tablespoons of each I suppose.
