Step 1: Marinate your pork chops for anywhere from 30 minutes to 1 day.
1 part water, 2 parts soy sauce, 2 tablespoons Worcestershire sauce.
Step 2: Get your charcoal grill ready.
When your coals are ashed over add a couple of wood chunks.
Step 3: Cook the chops right over the heat for a couple minutes per side to sear in the juices. After you have a good sear move them to indirect heat so that they can slowly cook along with the light smoke that should be coming from your charcoal. Close your vents so that u can keep the temp in the grill nice and low. 250 to 300 is perfect.
